Almost Meatless Sloppy Joes of Michelle - Recipefy

Olive Oil
1/2 cup finely chopped white onion
1 tablespoon minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper
6 ounces ground beef (or turkey/chicken could work)
1/2 cup grated carrot
2 teaspoons chili powder
1 teaspoon brown sugar
1/2 teaspoon dried oregano
1/4 teaspoon ground red pepper
2 cups canned crushed tomatoes (I use a 28 oz can)
1 (15.5 ounce) can red beans (kidney and pinto work too), rinsed and drained
4 sandwich rolls

1. Heat large skillet over medium high heat.

2. Add oil to coat the pan.

3. Add onion, garlic, salt, black pepper, and beef to pan.

4. Cook for about 5 minutes or until the meat is browned and the veggies are tender, stirring occasionally.

5. Add the carrot, chili powder, sugar, oregano, and red pepper and cook for 2 minutes, stirring occasionally.

6. Stir in the tomatoes and bring to a boil.

7. Reduce the heat to medium and cook for 10 minutes or until thickened, stirring occasionally.

8. Partially mash the beans with a fork and add them to the tomato/beef mixture in the pan.

9. Cook for about a minute or until heated through.

10. Spoon the mixture onto rolls and enjoy!
