Almost meatless sloppy joes

Olive Oil
1/2 cup finely chopped white onion
1 tablespoon minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper
6 ounces ground beef (or turkey/chicken could work)
1/2 cup grated carrot
2 teaspoons chili powder
1 teaspoon brown sugar
1/2 teaspoon dried oregano
1/4 teaspoon ground red pepper
2 cups canned crushed tomatoes (I use a 28 oz can)
1 (15.5 ounce) can red beans (kidney and pinto work too), rinsed and drained

1. Heat large skillet over medium high heat. Add oil to coat the pan. A
2. dd onion, garlic, salt, black pepper, and beef to pan. Cook for about 5 minutes or until the meat is browned and the veggies are tender, stirring occasionally.
3. Add the carrot, chili powder, sugar, oregano, and red pepper and cook for 2 minutes, stirring occasionally.
4. Stir in the tomatoes and bring to a boil. Reduce the heat to medium and cook for 10 minutes or until thickened, stirring occasionally.
5. Partially mash the beans with a fork and add them to the tomato/beef mixture in the pan.
6. Cook for about a minute or until heated through.
7. Spoon the mixture onto rolls and enjoy!
