Baked Chicken Po' Boy Sandwiches of Michelle - Recipefy

2 boneless skinless chicken breasts
2 tablespoons all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1/3 cup bread crumbs
1 egg white, beaten
1/2 tablespoon water
1 1/2 cups tricolor coleslaw mix
1/2 small onion, minced
3 tablespoons fresh cilantro, minced
1/4 cup vegetable oil
3 tablespoons fresh lime juice
1 garlic clove, minced
4 hoagie rolls

1. Preheat oven to 400 degrees and coat a baking sheet with cooking spray.

2. Cut each chicken breast in half lengthwise.

3. In a large, resealable, plastic bag, combine flour, garlic powder, cayenne pepper and salt.

4. In a shallow dish, combine bread crumbs and Parmesan cheese. In another shallow dish, combine egg white and water.

5. Place one chicken breast half in the bag with the flour mixture and shake to coat. Dip in the egg mixture and then roll in the bread crumb mixture; place on the prepared baking sheet. Repeat with remaining chicken breast halves.

6. Place in the oven and cook for 8 minutes; turn chicken over and cook for 8-10 minutes or longer until chicken is cooked through and juices run clear.

7. In a large bowl, combine cole slaw, onion, and cilantro.

8. In a small bowl, whisk together oil, lime juice and garlic; add to cole slaw mixture and toss to coat well; season to taste with salt and pepper.

9. Split hoagie rolls in half, keeping them intact, and place, cut-side-up, on a baking sheet.

10. Place in the oven and toast for 2 to 3 minutes. Place chicken strips in rolls and top with cole slaw.
