Cajun red beans and rice

2 sausage links, casings removed and broken up
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup chopped celery
1 1/2 teaspoons Cajun seasoning
3/4 teaspoon salt
1/2 teaspoon dried oregano
2 garlic cloves, minced
1 (15 ounce) can red beans, rinsed and drained
1/4 cup water
1 (14.5 ounce) can diced tomatoes, undrained
1/4 teaspoon black pepper
1 bag of boil-in-a-bag rice (or enough rice to make the desired number of servings)
1. Heat a large skillet over medium high heat.
2. Add oil to the pan, swirling to coat.
3. Add sausage, onion, bell pepper, and celery.
4. Saute about 4 minutes, breaking up the sausage as you stir.
5. Add the Cajun seasoning, salt, oregano, and garlic to the pan and cook for about a minute.
6. Partially mash the red beans with a fork and add to the sausage mixture with the water and can of diced tomatoes.
7. Bring to a boil, reduce heat and simmer for about 10 minutes or until thickened.
8. Stir in black pepper and serve over rice.
