Calzones
Recipe by
1 cup part-skim ricotta
3/4 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon dried basil
1/4 teaspoon black pepper
Mix and Match Filling
2-3 ounces ham (also could use pepperoni or sliced/crumbled sausage)
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped red bell pepper
1/4 cup finely chopped onion
1/2 cup chopped mushrooms
1 (13.8-ounce) can refrigerated pizza crust dough
Cooking spray
Marinara sauce (for dipping)
1. Preheat oven to 450°.
2. Combine ricotta, mozzarella, Parmesan, basil and black pepper.
3. If using sausage, heat a small skillet over medium heat. Add oil to the pan, swirling to coat. Add the sausage slices/crumbles and saute until cooked through.
4. For the vegetables, heat a medium skillet over medium heat. Add oil to the pan, swirling to coat. Add the vegetables and saute for about 6 minutes or until tender.
5. Remove from heat and combine with the meat. Combine meat and veggies with the cheese mixture.
6. Divide dough evenly into 4 pieces; pat each dough piece into a circle.
7. Spoon about 1/2 cup of cheese mixture onto half of each circle, leaving a 1/2-inch border. Fold dough over filling until edges almost meet. Bring bottom edge over top edge; crimp edges of dough with fingers to form a rim.
8. Place calzones on a baking sheet coated with cooking spray. Bake at 450° for 14 minutes or until browned.
9. Serve with marinara sauce for dipping.
