Cornmeal crusted catfish
Recipe by3 slices bacon (NOTE: If you don't do pork products, you can omit the bacon and just cook the catfish straight up in oil)
1/3 cup yellow cornmeal
2 teaspoons Cajun seasoning
1/2 teaspoon salt
4 (6-ounce) catfish fillets
1. Cook bacon in a large nonstick skillet over medium heat until crisp.
2. Remove bacon from pan and either save for another use or enjoy!
3. Leave drippings in the skillet.
4. Combine cornmeal, seasoning, and salt in a shallow dish.
5. Dredge fillets in cornmeal mixture, shaking off excess
6. Heat reserved drippings in pan over medium-high heat.
7. Add fillets; cook 5 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
