Filets and spinach with balsamic vinaigrette
Recipe by1 pound fresh or frozen skinless haddock, cod, or other fish fillets, 3/4 to 1 inch thick
4 cups fresh baby spinach leaves
1 medium onion cut into thin wedges
3 tablespoons olive oil
1 medium red bell pepper cut into strips
1/8 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons balsamic vinegar
1 tablespoon honey
1. If frozen, thaw fish and pat dry.
2. Place spinach in a large bowl.
3. Heat a large skillet over medium heat. Add olive oil, swirling to coat.
4. Add onion and cook for 5-6 minutes or until tender and slightly golden.
5. Add pepper strips an cook onion and pepper mixture for another minute.
6. Remove from heat and stir onion/pepper mixture into spinach. Keep warm.
7. Sprinkle fish with salt and pepper.
8. Add oil to skillet and swirl to coat.
9. Add fish and cook for 4 minutes. Flip fish and turn heat down to medium. Cook for another 3 minutes or until fish flakes easily with a fork.
10. While fish cooks, combine balsamic vinegar and honey.
11. Once fish is done, remove from pan and keep warm.
12. Add balsamic/honey mixture to skillet and cook and stir until heated through.
13. Spoon balsamic mixture over fish and spinach to serve.
