Honey mustard chicken with roasted new potatoes
Recipe by4 (6 ounce) boneless, skinless chicken thighs
1/2 teaspoon salt
Ground black pepper
4 tablespoons Dijon mustard
2 tablespoons honey
1 minced shallot
1 tablespoon minced fresh thyme leaves OR 1/2 teaspoon dried
1 pound small red potatoes cut into halves
Olive Oil
1. Preheat oven to 375 degrees.
2. Sprinkle the chicken thighs with 1/4 teaspoon salt and pepper. Place in a 13 x 9 inch baking dish.
3. In a small bowl, combine mustard, honey, shallot, and thyme to form a paste. Spread over chicken thighs, covering them completely.
4. Toss the potatoes with a little olive oil and sprinkle with 1/4 teaspoon salt and pepper. Add potatoes to the pan with the chicken thighs.
5. Bake about 50 minutes, stirring the potatoes once, until the potatoes and chicken are tender and cooked through.
