Lemon pepper shrimp scampi
Recipe by1 cup uncooked orzo
2 tablespoons fresh chopped parsley
1/2 teaspoon salt
3 tablespoons butter
1 1/2 pounds peeled and deveined shrimp
2 teaspoons garlic
2 tablespoons lemon juice
1/4 teaspoon black pepper
1. Cook orzo according to the package directions.
2. Drain and add parsley and salt. Keep warm.
3. Meanwhile, heat a large skillet over medium high heat.
4. Add 2 tablespoons of butter to the pan.
5. Sprinkle shrimp with salt and add to the pan. Cook for a few minutes (2-4) or until just about done.
6. Remove from pan and set aside.
7. Melt remaining tablespoon butter in the pan.
8. Add the garlic and cook for about 30 seconds, stirring constantly.
9. Return shrimp to pan, add lemon juice and black pepper.
10. Cook for about a minute or until the shrimp are done. Serve over the orzo.
