Olive Oil
1/2 cup chopped onion
6 tablespoons ketchup
3/4 cup panko (Japanese breadcrumbs...in the baking aisle)
1/4 cup chopped flat leaf parsley
1 teaspoon Worcestershire sauce
3/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound ground sirloin
1 large egg white
4 slices (or approximately 1/2 cup shredded) cheese (provolone, american, muenster all work well)

1. Preheat oven to 350

2. Warm a skillet over medium heat. Add enough oil to coat the pan and add the onion.

3. Cook about 6 minutes or until tender stirring occasionally.

4. Remove from heat and add onion, 3 tbs ketchup, and remaining ingredients in a bowl. Combine with your hands until just blended - do not overwork or you will end up with a dense loaf.

5. Grease a 8 or 9 inch baking dish or loaf pan (round, square, whatever shape you have...).

6. Place about half of the meat mixture into the bottom of the pan - no need to press it into place too aggressively; again with the dense loaf issue.

7. Top with cheese slices/shreds. Use as much cheese as you like - I usually cover it with one nice layer.

8. Top with the remaining meat mixture (you should know by now not to work the meat too hard) and brush the top of the loaf with the rest of the ketchup.

9. Bake at 350 for 35 minutes or until the internal temperature reaches 160.

10. Let stand for a few minutes (so you don't burn your mouth on the delicious cheese!) and enjoy!

11. We usually serve this with mashed potatoes, brown gravy, and peas or broccoli or something green!
