Shrimp vodka pasta
Recipe by
9 oz of linguine (we always use a little more pasta so be liberal...if you want to really move quick, use the refrigerated kind)
Olive Oil
1 lb of raw shrimp, peeled and deveined
3 garlic cloves, minced
1/3 cup of vodka
1 1/3 cups marinara sauce
1/3 cup chopped fresh basil
1/4 cup whipping cream
Salt and Pepper to taste
1. Cook the pasta according to the package directions.
2. Heat a large skillet over medium to medium high heat. Add olive oil (enough to coat the pan) to the pan once it is warm (not too hot, otherwise the oil will smoke).
3. Add the shrimp and saute for approximately 4 minutes or until the shrimp are done; remove shrimp from the pan.
4. Add some more oil and the minced garlic to the pan. Cook for 1 minute.
5. Add the vodka to the pan (be careful if you are using a gas cooktop!!!) and cook for another minute.
6. Add marinara, 1/4 cup of the basil, cream, salt, and pepper. Bring to a simmer.
7. Stir in the shrimp and pasta and sprinkle with remaining basil.
8. Top off individual servings with a little parmesan cheese and enjoy!
