Pani puri
Rezept vonDates - Two fist fulls
Tamarind - One fist full
Jaggery - One fist full
One Lemon
Moong dal, Potatoes for filling
Water - Two litres
Pani Puri Masala - Everest Brand works best
Salt
Green chillies
One bunch of Coriander
Half a bunch of Mint
Ready made Puris - 150 nos
Vorb. Zeit → 240 Min.
Koch Zeit → 60 Min.
1. Soak the dates and tamarind in water. Keep for a full four hours to make them soft.
If you are short of time, soak them in warm water.
2. Keep a big vessel and add one liter of water to it.
3. Add the Jaggery and let it mix
4. Next prepare these three chutneys and mix it in the vessel of water as per taste:
5. Sweet Chutney - Deseed the soaked dates and grind them in the mixie with water
Tamarind Chutney - Deseed the tamarind and grind it in the mixie with water. Filter it through a coarse sieve to remove the fibers
Hot Chutney - Add chopped coriander, mint, green chillies and salt and grind them in the mixie with water. Adjust the chillies and salt to taste
6. Mix each of these three chutneys as per taste into the main vessel of water
7. Add 3-4 tablespoons of paani puri masala into it
8. Squeeze one fresh lemon in it.
9. Add salt to taste. Your mixed paani is ready.
10. Boil Potatoes and Moong daal. Mix them well, add some salt or chaat masala to this. Use this as the filling.
11. Serve Puris, filling and paani!
