2 cups flour, 2 tsp baking powder, 1 1/2 tsp baking soda, 1 tsp. salt, 2 tsp cinnamon, 1 cup chopped nuts, 2 cups sugar, 1 1/2 cups oil, 4 eggs, 2 cups grated carrots, 1 cup crushed pineapple.

Frosting
Cream 1/2 cup butter and 8 ounces cream cheese. Add 1 tsp. vanilla. Beat 1 box sifted powdered sugar, Use the juice of the pineapple if the frosting is too thick.

* I double the frosting to completley cover the cake.

Prep. Time → 30 miutes min

Cook Time → 30 minutes min

1. Sift flour, cinnamon, bapking powder, baking soda, and salt. Add sugar, oil and eggs. Mix well. Prepare 3 8 inch pans by cutting parchment paper to fit the bottom. Evenly distribute the batter between the three pans. Bake at 350 for 25 to 30 minutes. Cool the cakes on racks.

2. This cake was passed down from my sister's mother- in- law and has been called the best carrot cake ever made. Enjoy!

My sister and I have been making this cake for 40 year. My sister's mother-in-law to be, Ellen Conzelman., gave us this recipe.Surprisingly,,it is the easiest recipe one can imagine, yet it tastes better than any carrot cake you have ever tasted. Beware, once your friends and family taste it, they will ask for it on every occasion!
