Almond crusted tilapia with grilled artichokes, arugula, and a lemon garlic aioli
Recipe byFresh Tilapia- about 5-6 pieces
artichoke hearts (thawed if frozen)
1/4 cup flour
1/2 cup ground almonds (in food processor)
a handful of chopped almond (to garnish)
arugula
salt and pepper to taste
Dressing
about 1/2 cup mayonnaise (add more if the consistency is too runny)
2 -3 garlic cloves mashed
about 1/4 cup lemon juice
chopped parsley
salt and pepper
Prep. Time → 15 min
Cook Time → 10 min
1. wash and pat dry the tilapia fillets
2. combine the flour and ground almonds
3. season the fillets with salt and pepper on each side, then coat each on in the flour and ground almond mixture
4. Preheat a skillet with a little olive oil and fry the fillets about 2-3 minutes on each side on high until golden brown and there is a nice crust.
5. At the same time Grill the thawed artichoke hearts (I get mine from Trader Joes)
6. Whisk the Mayo, mashed garlic, lemon juice parsley and salt and pepper. you can play with the quantities of each ingredient depending on your taste. (I eyeballed most of it so i'm not exact with the quantities)
7. When you are ready to serve assemble the Aioli, Arugula, Artichokes, and tilapia fillets and garnish with chopped almonds(this gives it a nice crunch) and parsley.
8. When you are ready to eat toss the ingredients and enjoy!
