"arabian orange" muffins
Recipe by1/2 cup unsalted butter
zest of one large organic orange
8 oz. pitted dates
1/4 cup orange juice concentrate
1/2 cup buttermilk or yogurt
1 egg
2 1/2 cups whole wheat pastry flour
1/4 cup sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
3/4 cup slivered almonds, toasted
optional: kirsch
Prep. Time → 15 min
Cook Time → 30 min
1. Preheat over to 375 degrees.
2. Melt the butter in a medium saucepan over low heat. Add the orange zest. Remove from heat.
3. Combine dates, orange juice concentrate, buttermilk, and egg in a food processor. Add to butter and zest mixture.
4. Combine flour, sugar, baking powder, baking soda, salt, and almonds. Mix thoroughly.
5. Add wet ingredients to dry ingredients and stir until just combined.
6. Fill paper-lined muffin tins. (I fill every other hole in two 12-muffin tins to encourage even baking. Bake for 25 to 30 minutes, until muffins are starting to brown on top.
7. Drizzle warm muffins with kirsch, if desired.
