Aunt ruth's casserole cookies
Recipe by Schalene Dagutis
2 eggs
1 cup sugar
1 cup nuts, chopped
1 cup dates, chopped
1 cup coconut, flaked
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 to 1/2 cup granulated sugar
Prep. Time → 30 min
Cook Time → 30 min
1. Beat eggs, gradually add sugar. Beat until light and fluffy. Stir in nuts, dates, coconut, vanilla, and almond extract.
2. Pour into a one-quart greased casserole dish.
3. Bake at 350 degrees F for 30 minutes.
4. Remove from oven when crust forms. While still hot, stir with a wooden spoon until crust is gone.
5. Let cool and form into small balls. Roll in granulated sugar.
