Aviyal of Kitchen Snippets - Recipefy

Vegetables-2- 2 1/2 cup cut into medium thick and medium long pieces ( see notes )
Onion-1 small cut into slices
Green chillies-2 sliced
Turmeric powder-1/2 tspn
Raw mango-5-6 pieces ( see notes )
Curry leaves
Grated coconut-1/2 -3/4 cup
Cumin seeds-1/4 tspn
Coconut oil-3 tbpsn.

1. Coarsely grind coconut and cumin seeds adding as little water as possible and keep aside.

2. Heat 2 tblpn coconut oil in a pan and add curry leaves.When they splutter add the vegetables ,onion and green chillies and saute for few seconds.Add turmeric powder,sprinkle enough salt and mix well.Cover and cook in low flame till the vegetables are half cooked( don't add water for cooking vegetables ).Then add mango pieces ,cover and cook again till the vegetables are well cooked and soft.

3. Add the coconut mixture ,mix well and saute for 1 more mint.Finally,add 1 tblpsn coconut oil,mix well and remove from fire.

4. Notes: You can use any vegetable of your choice for making aviyal.Usually,carrot,potato,egg plant,ladies finger,raw banana,beans,drumsticks ,snakegourd etc are used.

Use good raw and sour mango .Instead of mango you can use 1 tomato also.
