Bacon, leek and sweet potato crustless quiche sw

Serves 4 (nice size portion)

Extra Easy: 1 HEa per serving

Green: 1 HEa per serving (replace the bacon with a meatless substitute)
Original: 1 HEa per serving (replace the sweet potato with butternut squash)
Ingredients

500g tub of fat free cottage cheese
4 eggs
4 slices of bacon (all visible fat removed)
1 small onion (finely chopped)
1 leek (washed and sliced thinly)
1 sweet potato (peeled and cut into bitesize chunks)
112g of cheddar cheese (4 HEa’s)
fresh chopped up basil (or dried if you haven’t for fresh)
Frylight or Pam Spray

Salt and Pepper

1. Method
Preheat oven to 180c or 350f
Place the eggs, cottage cheese and cheddar into a bowl and blend till smooth with a hand blender.

2. Place a frying pan over a medium heat and spray with some Frylight or Pam Spray.

3. Add the onion, leeks, sweet potato and bacon and cook until starts to golden.

4. Grease a quiche dish with some more Frylight or Pam spray and add the leek, bacon and potato mixture.

5. Pour over the top the cottage cheese mixture and sprinkle with some fresh chopped basil.

6. Place in the oven and bake for approx 40 mins, until top is golden and mixture is set.

7. Serve with a side salad.

8. NOTE: You can make this without the cheddar cheese if you wish to save your HEa, but I like the flavour the cheese gives to the quiche.
