Baja habanero pork tacos

3 Tbsp Celery Salt
2 Tbsp Dijon Mustard
2 tsp Cumin
1 tsp Black Pepper
1 tsp Onion Powder
1 tsp Ancho Chili Powder
1/2 tsp Garlic Powder
1/2 tsp Cinnamon
1/2 tsp Cocoa
Habanero Pickled Onions
1 Red Onion
5 Limes
1 Habanero Pepper
3/4 cup Distilled Vinegar
3 Tbsp Dark Brown Sugar
2 tsp Salt
Avocados, sliced
Cotija Cheese, crumbled
Pico de Gallo
Corn Tortillas
Prep. Time → 90 min
Cook Time → 660 min
1. Prepare pulled pork as consistent with Barbecue Pulled Pork recipe.
2. Retrieve the juice from 5 limes (approximately 1 cup).
3. Combine lime juice, vinegar, sugar, salt, and Habanero pepper (with seeds removed) in a medium sauce pan, Bring to a boil, or until all sugar is dissolved.
4. Thinly slice the onion, and place in a large nonreactive mixing bowl. Pour the lime and vinegar mixture over the onions and mix thoroughly.
5. Cover and refrigerate for at least 4 hours.
6. To make tacos, warm the corn tortillas on a hot frying pan. Pile the pork in the middle of the tortilla, and add sliced avocados, pickled onions, pico de gallo, and some crumbled cotija cheese.
