Baked pork chop rice - hong kong style
Recipe by1 egg
1 and 1/2 cups of white jasmine rice
2 onions
handful of peas, sweetcorn, carrot sticks
tomato ketchup
3 portions of Pork
4 medium tomatoes
Salt and Pepper
Corn Flour
White wine
Cheese (optional)
Sesame oil (optional)
Prep. Time → 20 min
Cook Time → 40 min
1. Step 1
Cut Tomatoes, slice Onions, cut Pork into smaller pieces
2. Step 2
Marinate Pork with Salt & Pepper, Sesame oil, corn flour and white wine
3. Step 3
Cook rice ( I always use a rice cooker)
4. Step 4
Pan fry Pork, until the meat is cooked and golden.
Step 5
Fry the rice, add in a wok with 1 beaten egg, add a bit of soya sauce if you like. Then when it's done place in a baking dish.
5. Step 6
The sauce - Throw the tomatoes, onions, peas, sweetcorn, & carrots into a wok, cook for a few minutes and try to reduce the tomatoes into a sauce. Add some water too, then some tomato ketchup for taste (salt, sugar.. it's up
to you)
6. Step 7
Place the pork on top of the rice, then the tomato based sauce on top of the pork. (Add a layer of cheese if you like)
7. Step 8
Place in the oven and bake until your happy :) (around 15-20mins...)
