Baked puttanesca
Recipe by1Tbs olive oil
6 garlic cloves, minced
1/4tsp red pepper flakes
2 anchovy fillets, rinsed and minced
Salt and pepper
28oz crushed tomatoes
3c water
12oz pasta
1/2c red wine
1/3c grated Parmesan
1/4c minced fresh basil
1/3c pitted Kalamata olives, roughly chopped
1c shredded mozzarella
Prep. Time → 10 min
Cook Time → 20 min
1. Adjust oven rack to middle position and heat oven to 475 degrees F
2. Combine oil, garlic, pepper flakes, anchovies, and 1/2tsp salt in large oven safe skillet and saute over medium-high until fragrant, about a minute
3. Add tomatoes, water, pasta, and 1/2tsp salt
4. Cover and cook, stirring often until pasta is al dente, approx 15 minutes
5. Stir in wine, parmesan, basil, and olives
6. Season with salt and pepper
7. Sprinkle mozzarella over the top
8. Transfer to oven and bake until cheese is melted and browned, approx 10 minutes
