Baked shrimp scampi
Recipe by2 tablespoons white wine or chicken stock
2 tablespoons lemon juice
1/2 cup Panko*
2 tablespoons unsalted butter, melted
2 pounds medium shrimp, raw but peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1/2 teaspoon red pepper flakes
Kosher salt and freshly ground pepper to taste
2 tablespoons fresh parsley leaves, chopped for garnish
*Panko is a Japanese-style breadcrumb and can be found in the Asian section of your local grocery.

Cook Time → 10 min
1. Preheat oven to 425 degrees F. Add white wine and lemon juice to a 9-inch by 3-inch baking dish; set aside.
2. In a small bowl, combine Panko and melted butter; set aside.
3. In a large bowl, combine shrimp, olive oil, garlic and red pepper flakes; season with salt and pepper to taste.
4. Add shrimp in a single layer to the baking dish. Sprinkle with Panko mixture.
5. Place into oven and bake until bubbly and golden brown, about 10-12 minutes.
6. Serve immediately, garnished with parsley if desired.
