Ingredients for 2lb loaf tin
3 oz sugar
6 oz caster sugar
2 eggs
1 lb ripe bananas, mashed
7 oz self raising flour
2 oz glace cherries (optional)
0.5 tsp bicarbonate of soda

Directions
1. Cream together the butter and sugar until pale and fluffy.
2. Gradually beat in the eggs, then stir in the bananas.
3. Mix in the remaining ingredients until well blended.
4. Spoon into a greased and lined 2 lb loaf tin and bake in a pre heated oven at 180*C/350*F/gas 4 for 1.25 hours until well risen and firm to the touch.
