Bara Brith (Welsh Fruitcake) of Rob Taylor - Recipefy

285g (10oz) - Mixed Dried Fruit
2x cups - Hot Tea
85g (3oz) - Brown Sugar
1x Lemon, grated rind
1¼ teaspoons - Mixed Spices (Pumpkin Spice, Cinnamon, Nutmeg, and/or Ginger)
1x Egg
340g (12oz) - Self-Rising Flour

Prep. Time → 720 min

Cook Time → 45-55 min

1. Soak Mixed Dried Fruit in the 2 cups of Hot Tea. Cover and let stand overnight.

2. Preheat oven to 175°C (350°F)

3. Strain the Mixed Fruit, saving the liquid. Add Brown Sugar, Lemon Rind, Mixed Spice, Egg and Self-Rising Flour to strained Mixed Fruit.

4. Add the liquid a bit at a time until the batter is of soft, dropping consistency.

5. Pour into a greased brown paper lined 2lb Loaf Pan and bake at 45-55 minutes until firm to the touch.
