Barfi
Recipe by5 cups Carnation Milk Powder
¼ lb. unsalted butter
Fresh milk enough to make dough
1 ½ cups sugar
¼ cup water
½ teaspoon cardamom powder
1 teaspoon almond extract
Green food colour
Pistachio nuts chopped for decoration
1. Mix powdered milk and butter together until it looks like crumbs.
2. Mix with fresh milk to form dough.
3. Put it in a fire-proof dish. Cover with aluminum foil.
4. Keep this on a stand or anything kept in a pressure cooker so that it does not touch the bottom of the pressure – cooker.
5. Put little water before resting this dish on the stand.
6. Pressure the mixture for 5-7 minutes.
7. Remove the mixture and blend it nicely in Cuisinart or any other food processor.
8. Make syrup with sugar and ¼ cups water.
Boil until little thick.
9. Add green colour.
10. Now add the mixture from the food processor into the syrup.
11. Cook on low heat until well mixed.
Before removing from heat, add cardamom and almond extract.
12. Set it in a buttered dish with a cookie sheet or any other dish.
Sprinkle with chopped pistachio.
Cut into pieces when set.
Note: You can make variations by reducing powder milk to 4 cups and adding 1 cup of ground almonds. OR You can add 1 cup of desiccated coconut instead of almonds then you an add pink colour and don’t add almond extract but add only cardamom.
