Beef barley soup

12 ounces of beef or lamb stew meat, 1 inch cubes
1 TBSP cooking oil
4 cups water
1 large onion, chopped
2 celery stalks, chopped
2 tsp beef bouillon
1 tsp dried oregano or basil, crushed
1/4 tsp black pepper
2 cloves garlic, minced
1 bay leaf
2 cups frozen mixed vegetables
1-14.5 ounce can diced tomatoes, undrained
2 cups potatoes or parsnips, cut into 1/2 inch cubes
1/2 cup regular barley

Prep. Time → 25 min

Cook Time → 75 min

1. 1- brown meat in oil, in large saucepan. Stir in water, barley, onion, celery, bouillon, oregano, pepper, garlic and bay leaf. Bring to a boil; reduce heat. Simmer covered for 1 hour for beef (45min. For lamb)
2- stir in frozen vegetables, undrained tomatoes and potatoes or parsnips. Return to boiling; reduce heat. Simmer covered about 15 minutes more until meat and vegetables are tender. Discard bay leaf.
