Best muffins ever.
Recipe by150g (5 1/2 oz) plain flour
1 Tsp baking powder
1/8 Tsp bicarbonate of soda
1/4 Tsp salt
85g (3oz) caster sugar
85g (3oz) butter, melted and cooled slightly
1 egg
4 Tbsp milk
1Tsp vanilla extract
3 Tbsp natural yoghurt
(Tsp = teaspoon Tbsp =tablespoon)
Prep. Time → 20 min
Cook Time → 18 to 20 min
1. Preheat the oven to 180oc/ 350of/ gas mark 4. Line a muffin tin with paper muffin case.
2. Put the flour, baking powder, bicarbonate of soda, salt, and sugar in a large bowl. Mix them together.
3. In another bowl, put the butter, egg, milk, vanilla, and yoghurt, and whisk them together.
4. Pour the whisked butter mixture onto the flour mixture.
5. Stir everything together. Be careful not to over mix there should still be a few lumps.
6. Spoon the mixture into the muffin case. Bake for 18 to 20 minutes until risen and firm to the touch. Cool for 5 minutes in the tin, then remove and put on a wire rack to cool completely.
7. YOU COULD ADD THESE NEXT TIME :
spicy apple and raisin:
Add 1 1/2 Tsp mixed spice, 60 g (2oz) raisin, and 1/2 peeled, chopped apple to the flour
orange and cranberry
Add 60g (2oz) dried cranberries and the zest of 1 orange to the flour. Replace the milk with 4 Tbsp orange juice.
