Blueberry and cinnamon muffins
Recipe by4 oz plain flour
1 tbsp baking powder
2 1/2 oz light brown sugar
1 egg
6 fl oz milk
3 tbsp vegetable oil
2 tbsp ground cinnamon
4 oz fresh or thawed frozen blueberries
Cook Time → 25 min
1. Preheat the oven to 375*F/190*C/gas 5. Lightly grease 8 deep muffin tins.
2. With and electric mixer, beat the first 7 ingredients together until smooth.
3. Fold in the blueberries.
4. Spoon the mixture into the muffin cups, filling them two thirds full. Bake until a skewer inserted in the centre of a muffin comes out clean, about 25 minutes.
5. Let cool in the tins on a wire rack for 10 minutes, then unmould the muffins on to the wire rack and allow to cool completely.
