Blueberry muffins
Recipe by1 ¾ cups all-purpose flour
1/3 cup sugar
2 tsp. baking powder
¼ tsp. salt
1 beaten egg
¾ cup milk
¼ cup cooking oil
1 cup fresh or frozen blueberries, tossed with 1 Tbs. sugar and 1 tsp. shredded lemon peel
Prep. Time → 25 min
Cook Time → 20 min
1. Combine flour, sugar, baking powder, and salt. Make a well in the center.
Combine egg, milk, and oil; add all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in blueberries.
2. Lightly grease muffin cups or line with paper baking cups; fill 2/3 full. Bake in a 400 degree oven for 20 minutes. Makes 10-12.
