Broccoli and blue cheese salad
Recipe by1 bunch broccoli, cut into florets (6 cups)
1⁄4 cup buttermilk
2 tablespoons sour cream
2 ounces blue cheese, crumbled
1 scallion, sliced
1⁄2 teaspoon red wine vinegar
kosher salt and black pepper
1⁄2 cup toasted walnuts
Prep. Time → 10 min
Cook Time → 7 min
1. Fill a large saucepan with 1 inch of water and fit with a steamer basket. Bring the water to a boil. Place the broccoli in the basket, cover, and steam until tender, 5 to 7 minutes. Rinse with cold water to cool.
2. Meanwhile, in a small bowl, stir together the buttermilk, sour cream, blue cheese, scallion, vinegar, ½ teaspoon salt, and ¼ teaspoon pepper.
3. Drizzle the broccoli with the dressing and sprinkle with the walnuts.
