Broccoli, cauliflower an cheddar soup with gruyere an chive croutons
Recipe by10g (1 tbsp) butter
2 onions, finely chopped
10ml (2 tsp) crushed garlic
400g broccoli, washed
300g cauliflower, washed
500ml vegetable stock, warm
125ml cheddar cheese, grated
125ml fresh cream
pinch of nutmeg
salt an freshly ground black pepper, to taste
croutons
12 slices baguette
olive oil, for brushing
80ml gruyere, grated
30ml chives, finely chopped
Prep. Time → 30 min
Cook Time → 20 min
1. soup:
bring large pot of salte water to boil, preheat grill of oven
2. heat butter in saucepan over medium heat. add onion and garlic and saute until soft and translucent (5-6min)
3. blanch broccoli and cauliflower until tener but still holding shape. roughly chop into smaller pieces that fit into saucepan with fried onions
4. saute for few minutes without browning too much
5. add stock and simmer gently until tener (8-10min)
6. put in food processor and pulse until smooth
7. add cheddar, cream and nutmeg and pulse to combine. season.
8. croutons:
brush baguette with olive oil, place on baking tray and scatter gruyere over them
9. grill until golden brown and bubbly (2-3min)
10. careful not to burn. scatter chives over
11. serve
