Broccoli cheddar soup

5 TBSP butter
1 c. yellow onions, chopped
1/2 tsp. salt
1/4 tsp. pepper
pinch of nutmeg
1/2 tsp. minced garlic
1/2 tsp. chopped fresh thyme
3 TBSP flour
3 c. chicken broth
1 (16 oz) package frozen broccoli, thawed and separated
1/2 c. heavy cream
1 1/4 c. shredded cheddar cheese

Prep. Time → 10 min

Cook Time → 25 min

1. in medium pot, melt 3 TBSP butter, add onions, salt, pepper, nutmeg and cook stirring, until soft, 3 minutes

2. add garlic and thyme cook for 20 seconds

3. add flour and cook, stirring until mixture id well blended , 2 minutes

4. slowly add chicken broth, whisking constantly and bring to a boil

5. reduce heat and simmer until thickened about 5 minutes

6. add broccoli and cook stirring until tender, 10 minutes

7. remove from heat and puree if desired ( I like to puree about 1/3 of soup)

8. add cream and bring to simmer to heat through

9. add cheese and cook over low, until melted

10. add remaining 2 TBSP butter, stirring to blend
