Buckeye bars
Recipe by1/2 cup butter
3/4 cup peanut butter
22 vanilla wafers, crushed(3/4 cup)
2 cups icing sugar
1/2 of 8oz tub Cool whip (do not thaw)
3 squares bakers semi-sweet chocolate
1. Line a 8" square pan with foil, with ends of foil extending over sides.
2. Beat butter and peanut butter with mixer until blended. Add wafer crumbs; mix well. Gradually beat in sugar. Press onto bottom of pan.
3. Microwave cool whip and chocolate in a glass bowl on high for 1 minute; stir. Microwave 15 second intervals and stir until melted and smooth. Spread over peanut butter layer.
4. Refrigerate 2 hours. Use foil handles to lift from pan before cutting to serve.
