Burnt Caramel rice pudding of Forbidden - Recipefy

200g (1 cup) arborio rice
1L milk
110g (half cup) castor sugar
1 vanilla bean, split and seeds scraped
110g (half cup) castor sugar
125ml fresh thick cream

Prep. Time → 10 min

Cook Time → 50 min

1. place rice, milk, sugar and vanilla in medium sauce pan over high heat and bring to boil

2. reduce heat to low, cover and cook, stirring occasionally, for 25-30min until rice is tender

3. place rest of sugar in small saucepan over low heat and cook for 8-10min, swirling pan occasionally, or until sugar is dissolved and golden

4. stir cream through the pudding and drizzle with caramel to serve
