Camilla's couscous salad
Recipe by
Ingredients for 3 serving
1 cup regular or spelt couscous
2 cups water (or vegetable stock)
salt to taste
3 medium tomato
10-12 olives (or as many as you want)
2 oz almonds
1 oz fresh coriander
olive oil
lemon jusice and zest
Directions
1. In a saucepan, bring water to a boil. Add salt and stir. Add couscous and remove from heat and allow to sit for about 5 minutes.
2. Chop tomatoes, almonds, and coriander. Add to couscous .
3. Add olives
4. Sprinkle with olive oil and lemon juice and zest.
5. Serve (see recipe for vegan tagine).
