Carribean chicken soup
Recipe byjuice of 1/2 lemon
1 chicken quater sliced into bite sized pieces
1/2 chistophene peeled and chopped
150g pumpkin chopped into small pieces
100g white yam peeled and chopped
1 potato peeled and chopped
chicken stock to taste
1 spring onion chopped
1 chilli
1 thyme sprig
1 tsp salt
Prep. Time → 5 min
Cook Time → 40 min
1. squeeze the lemon juice onto the chicken
2. put the chicken into a large pan with 750ml of cold water
3. bring to the boil and cook for 25 min
4. add christophene, pumpkin,yam and potato to the pan
5. bring back to the boil and cook for 12 min
6. add stock, spring onions, chilli, thyme and salt. Reduce the heat and simmer for 15 min.
