4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 tsp vanilla extract
2 cups cake flour
2 tsp baking soda
2 tsp baking powder
1/2 teaspoon salt
2 tsp ground cinnamon
3 cups grated carrots

icing
1/2 cup butter, softened
225ml cottage cheese, softened
4 cups icing sugar
1 tsp vanilla extract

Prep. Time → 30 min

Cook Time → 40-50 min

1. Preheat oven to 180C

2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla.

3. Mix in flour, baking soda, baking powder, salt and cinnamon

4. Stir in carrots

5. Bake for 40-50min

6. Frosting:
In a medium bowl, combine butter, cottage cheese, icing sugar and vanilla.

7. Beat until the mixture is smooth and creamy
