Carrot curry
Recipe by4 large carrots
1 large onion
1 green chilli
150 ml coconut milk
150 ml water
1 tsp chilli powder
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground turmeric
2 tbsp oil
6 curry leaves
Salt pepper to taste
Fresh coriander for garnish
1. Peel, wash and cut carrots into 3 cm sticks long blocks.
2. Chop onions and a green chilli.
3. In a bown mix sliced carrots, ground cumin, ground coriander, turmeric, salt, pepper and chilli powder.
4. Heat oil in the pan, add chopped onions, chilli and curry leaves and saute until the onions are lightly brown.
5. Add carrot mixture and keep tossing for 5 to 7 minutes.
6. Add coconut milk and water.
7. Bring to boil and simmer under cover until the carrots are tender.
8. Garnish with coriander leaves and serve.
