Cashew chili
Recipe by
Ingredients for 6-8
2-3 cups cooked kidney beans (1 cup dry)
4 medium onions chopped
2 green peppers chopped
3 stalks of celery chopped
3 or more garlic cloves mashed
1 tsp. basil
1 tsp. oregano
1 tsp. chili powder
1 tsp. cumin
1 qt. canned tomatoes
black pepper
1 bay leaf
1 cup cashews
1 handful raisins or 1 Tbs. molasses
1/4 cup red wine vinegar or cider vinegar (add at end)
Easy
Directions
1. Stir fry veggies in soup pot with a little oil.
2. Add all ingredients and cook until cashews are soft.
3. Then, add vinegar, a little at a time.
4. Enjoy!
