Ceared scallops on a bed of rice with fried mushrooms
Recipe by
6 fresh scallops
100g of white rice
A pinch of basil
2 handfuls of mushrooms
A knob of butter
1. First boil the rice in boiling water for about 20mins and slice the mushrooms into halves
2. While the rice is bubbling away melt the butter in a pan with the basil, then tip in mushrooms and fry until they have srunk a little and are nice and brown
3. Now that the mushrooms are cooked the lovely juices and flavours will have infused with the remaining butter but if this sauce looks scarce and another knob of butter and a twist of pepper
4. Quickly pop the scallops in and fry for about 20 to 50 seconds on each side or until patchy with yummy golden brown gooddness
5. To plate mix the mushrooms with the rice and separate them evenly onto each plate put the scallops on top and drizzle over any remaining juice.
