Ingredients for 4 servings
1lb fresh scallops
1c lime juice
1c diced avocado
1/2c red onion, minced
1/2 c finely chopped and seeded tomato
2Tbs olive oil
2tsp minced jalapeno
1/2tsp salt
1/8tsp cayenne
1/4tsp cumin
Prep. Time → 10 min
Cook Time → 180 min

Directions
1. Pat he scallops dry and place in a glass bowl
2. Cover with lime juice and marinate until opaque, about 3 hours, in the refrigerator (if this wierds you out, pan sear the scallops instead)
3. Take out scallops and put in new bowl
4. Add the remaining ingredients to the scallops
5. Gently stir to mix
6. Add additional lime juice to taste
7. Refrigerate for 1 hour
8. Served chilled
