Cheddar and cauliflower soup
Recipe by2 tsp. olive oil
1 cup finely chopped onion
3tbs. all-purpose flour
1\4 tsp. salt
Dash pepper
4 cups reduced-sodium chicken broth
2 cups weekend-prepped caouliflower puree
1 cup shredded reduced-fat sharp cheddar cheese
Prep. Time → 25 min
1. Heat oil in a large saucepan over medium heat. Add onion. Cook 5 to7 min. or until tender.
2. Stir in flour, salt,and pepper. Add broth all at once. Whisk to combine. Bring to a simmer, whisking occasionally.
3. Whisk in caouliflower puree, simmer 5 mins. Remove from heat AND stir in cheese.
4. Let mixture cool slightily. In a. blender, blend mixture half at a time until smooth.
5. Ladle soup intorno bowls.
