16-20 raw, shelled Tiger prawns, depending on size and appetite,
A handfull of fresh mint leaves, finely chopped,
2-3 cloves of garlic, crushed,
1-2 chillies, deseeded and finely chopped,
A good glug of olive oil, not extra virgin,
A knob of butter for frying

Prep. Time → 20-25 min

Cook Time → 5 min

1. In a ziploc bag, or a sandwich bag, place the prawns, chopped mint, chillies, crushed garlic and olive oil, then seal the bag and work the ingredients together thoroughly.

2. Place in the fridge for as long as you can to allow the flavours to infuse.

3. Take a frying pan or griddle pan, heat it up and add the butter.

4. Take the bag from the fridge and add the contents, including the oil to the frying pan.

5. Cook the prawns until pink and serve with crusty french bread.

This sounds delicious, I can't wait to try it. Think I might leave the seeds of my chillis in, though. Thanks for the great idea :-)
