Cheese 'n' chive dip

- 113gm (4oz) very low fat cottage cheese
- 113gm (4oz) Quark cheese
- 1 clove garlic, crushed
- 1tbsp lemon juice
- 1tbsp chopped fresh parsley
- 1tbsp chopped fresh or 1tsp dried marjoram
- 2tbsp chopped fresh or 2tsp dried basil
- ½tsp salt
- black pepper
- fresh herbs to garnish (optional)
1. Method
1. Put the cheeses, garlic and lemon juice in the bowl of a food processor fitted with a metal blade. Process until smooth. Alternatively, press the cottage cheese through a nylon seive, then mix with the Quark, garlic and lemon juice.
2. Add the herbs and seasoning to the cheese mixture. Process briefly or mix to combine. (If using a food processor, do not over-process after adding the herbs, or the dip will turn green. Scrape down the inside of the bowl every few seconds so that the mixture is evenly processed).
3. Transfer the dip to a small bowl. Serve immediately, or cover and chill for 30 minutes to allow the flavours to mingle. Garnish with fresh herbs, if liked.
