Ingredients
- Fry Light
- 454gm (1lb) extra lean minced beef
- 1 onion, finely chopped
- 2 carrots, finely diced
- 400gm can chopped tomatoes
- 2tbsp tomato puree (1 Syn)
- 1tbsp dried mixed herbs
- 400gm can red kidney beans in chilli sauce
- 300ml (11fl oz) beef stock
- 198gm (7oz) can sweetcorn, drained
- 700gm (1½lb) mashed potatoes
- 4 x Laughing Cow Light cheese triangles (6 Syns)
- 1tbsp paprika
- 170gm (6oz) reduced fat Cheddar, grated

1. Method
1. Spray a large, non-stick frying pan over a moderately high heat. Add the beef mince, onion and carrot. Using a wooden spoon or a spatula, break the meat up so that it doesn’t stick together in lumps. Fry, stirring frequently, until the meat is browned and all the pieces are separated.

2. Tip in the canned tomatoes, tomato puree, herbs, red kidney beans, beef stock and sweetcorn. Mix well and simmer for 5-10 minutes.

3. Preheat the oven to 200C / 400F / Gas 6. Spoon the sauce into an ovenproof dish. Beat the mash with the Laughing Cow Light and paprika.

4. Spoon the potato over the mince mixture and sprinkle with the grated cheese. Bake for 15-20 minutes until the topping is golden.

5. Serve with a selection of seasonal superfree vegetables.
