1. Cook 1 (22 oz.) pkg. frozen mashed potatoes according to pkg. directions or your own recipe. Stir in 1 cup shredded Mexican four cheese blend, 3 Tbsp butter, ½ tsp. salt and ¼ tsp. pepper until smooth. Serve immediately.
