Cheesy potato breakfast casserole
Recipe by1 pound turkey sausage
1 large yellow onion, chopped, sauteed
1 colored bell pepper, chopped, sauteed
20 ounce bag frozen Diced potatoes
8 oz shredded cheese
5 eggs
egg whites for 4 eggs
1/2 cup milk
Pepper, to taste

Chopped zucchini
Chopped broccoli
Chopped cherry tomatoes
-- Southwest style add-ins --
Hot sauce, to taste
Shredded hot pepper cheese / Mexican cheese blend
Chopped cherry tomatoes
Finely diced jalapeno pepper
Frozen sweet corn
Top with chopped avocado (after baking!)
Prep. Time → 20 min
Cook Time → 55 min
1. Preheat oven to 350. Spray baking dish (use one 9 x 13 or an 8x8 and a loaf dish) with non-stick spray. Set aside.
2. Prepare turkey sausage and veggies.
3. In a large mixing bowl, combine sausage and veggies with potatoes and cheese, then spread across baking dish(es). Reserve about one cup of the cheese to top the casserole.
4. Combine remaining ingredients in a medium mixing bowl; pour across baking dish(es).
5. Bake for 40minutes. Remove from oven and top with reserved cheese. Return to oven for 15 minutes.
6. Allow casserole to rest for 15-20 minutes. Serve and enjoy!
