1 lb of cooked mashed potatoes.
1 egg white, beaten.
1 tablespoon of cornflour.
1 bunch of spring onions, chopped.
6 oz of cheese grated.
2 tablespoons of plain flour.
2 tablespoons of olive oil.

Directions
1. Mix the mash, egg white, cornflour, spring onions and cheese together.
Shape into 8 cakes.
Chill for 1 hour to firm up.
2. Dust with flour.
Then fry in the oil for 4 minutes on each side.
