Cheesy potato topped meat pie

Ingredients
500g of extra lean beef mince
1 onion finely chopped
2 cloves of garlic crushed
1 large carrot chopped
half cup of frozen peas
half cup of frozen sweetcorn
250ml of beef stock
1 heaped teaspoon of marmite
1 teaspoon of thyme
dash of balsamic vinegar
4 large potatoes (or enough to cover you meat mixture in slices)
84g of cheddar cheese (4 HEa’s)
1. Method
2. Brown the mince, with the onion, garlic, thyme and carrot.
Add the beef stock (should be just enough stock to cover the mixture), marmite, balsamic vinegar, frozen peas and sweetcorn and bring to the boil.
remove from heat and put meat mixture to one side.
In the meantime preheat oven to 400c
Peel and slice the potatoes (not too thin).
Parboil for approx 5-8 mins until then just start to go soft
Put meat mixture in a square or round oven proof dish and lay potato slices on top. Spray with some spray oil and a little salt.
Bake in oven until potatoes just start to go golden and crisp.
Remove from oven and add the 84g of cheese.
Place back in oven until melted.
