Cherry almond muffins
Recipe by1/2 cup melted unsalted butter
1 tsp. ground cinnamon
2 tsp. almond extract
15 oz. can tart cherries in water, drained
1/2 cup buttermilk
1 egg, beaten
2 1/2 cups whole wheat pastry flour
1 cup almond meal
3/4 cup sugar
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp salt
Prep. Time → 10 min
Cook Time → 30 min
1. Preheat oven to 375 degrees (F).
Melt in the butter in a large saucepan over medium low heat.
Add the cinnamon to the warm butter and allow to cool while mixing the dry ingredients.
Add the remaining wet ingredients to the butter mixture. Stir to combine.
Fill muffin tins and bake for 25-30 minutes.
